Calling all the Bhindi lover’s….
Presenting Bhindi ka salan with hot steamed rice and alu papad.

Recipe of Bhindi ka salan
Take 200 gm bhindi.
Wash and wipe them properly.
Remove the both ends of bhindi’s and cut into 2 inches size in diamond shapes.
Then take 3-4 green chillies slit them length wise
One tomato – finely chopped
3 big onions – chopped in thin slices
Whole Garam masala spices/ freshly grounded garam masala – 1 tsp
Cashew and kismis – 2 spoon
Kasoori methi leaves( dried) – 1 tsp
Fresh coriander leaves – 1/2 cup chopped finely
Ajwain, kalongi, saunf – 1 pinch each
Curd – 1 cup
Chilly powder – 1 tsp
Haldi powder – 1 pinch
Hing – 1 pinch
Black pepper powder – 1 tsp
Whole red chilly – 2
Salt to taste.

Method –
Deep fry the Bhindi’s till half done.
Then remove from the oil and keep aside.
Then in the same oil fry the onions till golden crisp.
Then remove from oil and keep aside.
Then grind the fried onions, whole garam masala, tomato and curd.
Then the onion curd masala is ready.
Then take a kadhai. Heat oil in it. Put the dry fruits and fry them well.
Remove from oil when done.
Then in the same oil ,add the hing, ajwain, kalonji, saunf and whole red chilly.
Wait till they stops crackling.
Add the curd onion masala. Bhuno well.
Add the black pepper powder, salt, red chilly powder, turmeric powder.Then add the fried bhindi. Mix well.
Add one cup water. (You can add more water according to the required consistency)
Cook till the bhindi is done. Finish off with adding the kasuri methi, coriander leaves, green chillies and the fried dried fruits.
Serve hot with roti and rice.

Note – use mustard oil to enhance the flavour.
