Brinjal and peanut is a killer combination.

Brinjal in Peanut Gravy

Recipe –
10 small brinjal
Peanut – 20 pieces
Garlic – 10 clove’s
A small onion – chopped in small pieces
Green chilly – 2 ( chopped )
Curry leaves – 5 to 6 leaves
Coriander leaves – for garnish
Cumin – 1 tsp
Mustard Seeds – 1 tsp
Red chilly powder – 1 tsp
Turmeric powder – a pinch
Salt – to taste
Hing/ asafoetida – a pinch
Juice of half a lemon

Method – Wash and wipe brinjal’s completely dry.
Slit the brinjal’s from the middle horizontally and vertically keeping the stem intact.
Take a kadhai. Heat oil in it. Deep fry the brinjal’s till half cooked.
Remove from oil and keep aside.
Grind the peanutes and garlics( with a little water) to prepare the peanutes paste.
Then remove excess oil from the kadhai. Keep 4 tbsp oil in the kadhai.
Put the Hing, cumin and mustard seeds. Wait till they stops crackling.
Then add the chopped onion and curry leaves till the onion’s turns translucent.
Then add the peanut masala and saute well. Add salt, turmeric powder and chilly powder.
Add 1/3 cup water and wait till the masala starts to boil. Then add the fried brinjal’s and green chillies .Mix well.
You can cover and cook in low heat till the masala coats the brinjal’s .
Then after turning off the heat, add the lemon juice and mix well.
Garnish with fresh coriander leaves.
