Their recipes of masala are developed by Mr. Chandubhai Gala well known as Chandubhai Masalawala who has an experience of more than 35 years.
I tried their Dal fry masala and prepared dal fry following the recipe at the backside of the Galaji Dal fry packet.
My dal turns out to be very tasty and now I am hooked to this spice mix.
I have made some slight changes in the original recipe written on the packet to suit my requirement and taste.
Recipe of Dal fry using Galaji Dal Fry Masala
Dal of your choice (Moong dal, Toor Dal or mix dal) – 100 gm
Galaji Dal fry Masala – 1 tbsp
Onion – One (chopped finely)
Tomato – One whole
Galrlic – 8 to 10 cloves (chopped finely)
Green Chilly – Once (chopped finely)
Oil or Ghee – 3 tbsp
Salt to taste
Turmeric – 1 tsp
Cumin – 1 tsp
Hing or Asafoetida – a pinch
Red Chilly Powder – 1 tsp
Fresh coriander leaves- 2 tbsp (chopped finely)
Water as required
Pressure cook the dal along with the tomato,Galaji masala,salt and turmeric. Add water till the water comes 2″ above the dal level inside the cooker.Add one tsp of oil too in the uncooked dal and then close the cooker.
Pressure cook till two whistles. The trick is to first cook with high heat and after first whistle ,reduce the heat and then to cook for one more whistle.
Then keep the cooker aside and don’t open the lid.
Then take a deep bottomed pan and heat the rest oil.
Put Cumin and wait till the cumin stops crackling. Then add the chopped onion and garlic. Saute well. Then add the boiled tomato after removing from the boiled dal. Then add the hing and red chilly powder. Then after the tadka is well cooked pour the boiled dal into the tadka and boil for 2 minutes and then serve with chopped coriander.
