Cauliflower and Capsicum Curry

A basic curry recipe is a must have for every kitchen. I always cook curries which are less time consuming but no compromise in taste aspect.

Cauliflower and Capsicum Curry is such a curry which is a widely loved combo and must have when cauliflowers are in season. Prepare this cashew tomato based curry within 30 minutes and pair this with a dal and steamed rice or hot chapati’s.

Recipe of Cauliflower and Capsicum Curry – 

Preparation Time – 10 minutes

Cooking Time – 20 minutes

Serve – 2

Ingredients:

Cauliflower florets – 3 cups (Clean and separate the florets approx 12 pieces )

Green Capsicum – 1/ 4 th cup (Clean and cut half a capsicum into small square shapes)

Tomato – 1 big ( clean and chop the tomato)

Whole Cashews – 6 to 7 numbers ( You can also use broken cashews)

Onion – 1 big ( Finely chopped)

Ginger – 1 tsp

Garlic cloves – 7 to 8

Whole Coriander – 1 tbsp

Cumin – 1 tbsp

Garam masala Powder – 1 tsp

Red chilli powder – 1 tsp

Turmeric powder – 1 tsp

Salt to taste

Mustard Oil – 3 tbsp

Fresh coriander leaves –  1 tbsp chopped

Method :

First take a deep bottomed pan and boil some water.

Add some salt and put the cauliflowers into the boiling water and steam the cauliflowers for 3 minutes.

Then remove the cauliflowers from water and keep aside.

Prepare a paste of tomato, ginger, cashew , coriander seeds and cumin.( Note: First dry grind the cashew, coriander seeds and cumin then add the tomato, ginger and garlic and prepare a smooth paste)

Take a deep bottomed pan and heat mustard oil. Then put finely chopped onions and keep frying till the onions turns translucent and attain a golden colour. Then add the already prepared tomato cashew paste, red chilli powder, turmeric powder and salt. You can add a little water to this mix during cooking this masala. Continue to stir till the raw smell of ginger and garlic goes away.

Then add the par boiled cauliflowers and mix well to coat each cauliflower florets in masala. Add capsicum and a little water(approx 1/4th cup). Then mix again and keep covered and simmer for 5-7 minutes till done.

Finish with a sprinkle of garam masala and chopped coriander leaves. Enjoy this with your loved one’s.
